A Different Charm from Curry! Simple Hayashi Rice Recipe You Can Make at Home

After getting married, I used to make curry often, but this time I tried using Hayashi rice powder for a different flavor. Hayashi rice, similar to curry but with a rich umami and deep flavor, is perfect for a satisfying meal. It’s a practical recipe that you can make in a generous portion to serve for several meals, eliminating worries about leftovers. It even has a Western-style beef stew feel, making it a favorite for both children and adults.

Main Ingredients
  • 1 small potato
  • 1 small onion
  • 1/2 carrot
  • 150g pork (for curry or bulgogi)

Cooking Instructions

Step 1

First, peel the potatoes and carrot, then cut them into bite-sized cubes, about 1.5-2cm. Heat 2 tablespoons of cooking oil in a pan over medium heat. Add the cubed potatoes and carrots and stir-fry them gently, being careful not to burn them. Cook until the potatoes and carrots are slightly tender.

Step 2

Once the potatoes and carrots are somewhat cooked, add the onion, also cut into similar-sized pieces, and stir-fry together. Then, add the pork and cook until it’s no longer pink. Make sure to break up any clumps of meat as you stir-fry.

Step 3

When the pork is sufficiently cooked and no longer red, pour in 700ml of water into the pot. Turn the heat to high and bring the water to a boil before proceeding to the next step.

Step 4

Once the water is boiling, add 1 packet of Hayashi rice sauce powder. It’s important to stir the powder with a spatula or ladle as you add it to ensure it dissolves evenly without clumping.

Step 5

After the Hayashi rice powder has completely dissolved in the water, add 2 tablespoons of ketchup to enhance the flavor. The ketchup will add a sweet and sour taste, making it even more delicious. Mix well.

Step 6

When the sauce starts to bubble and simmer with the ingredients, reduce the heat to medium-low. Continue to stir and simmer until the sauce thickens to your desired consistency. Once it reaches your preferred thickness, turn off the heat. Your delicious Hayashi rice is complete! Serve generously over warm rice and enjoy.
