Main Ingredients
  • 4 medium potatoes
  • 1/4 carrot

Braising Seasoning
  • 2 Tbsp cooking oil
  • 1 Tbsp sugar
  • 1 Tbsp corn syrup (or oligosaccharide)
  • 1 Tbsp soy sauce

Cooking Instructions

Step 1

First, peel the potatoes using a peeler and cut them into bite-sized cubes, about 2cm in size. Briefly soak the cubed potatoes in cold water to remove excess starch; this helps prevent them from sticking together and results in a cleaner dish. Dice the carrot into similar-sized cubes.

Step 2

Heat a frying pan over medium-high heat and add a generous amount of cooking oil (2 Tbsp). Add the cubed potatoes and stir-fry for about 3 minutes, until the surfaces of the potatoes are lightly browned and slightly cooked. Sautéing them at this stage helps the potatoes maintain their shape and enhances their flavor.

Step 3

Once the potatoes appear to be halfway cooked, pour in half a cup of water (approximately 100ml). Then, add 1 Tbsp sugar, 1 Tbsp corn syrup, and 1 Tbsp soy sauce. Stir well to combine the seasonings evenly. Reduce the heat to medium-low and let the potatoes simmer until they are well-coated with the sauce.

Step 4

Cook until the liquid has reduced and is almost gone, leaving just a little sauce in the pan. Turn off the heat and transfer the braised potatoes to a serving dish. Enjoy these delicious braised potatoes immediately while they are warm for the best texture and flavor combination.
