Braised Egg Ingredients
  • 10 eggs
  • 30 shiitake mushroom stems (or 30 fresh shiitake mushroom stems)
  • 5 Cheongyang peppers (Korean red chili peppers)
  • 1 handful of clean onion peels (for broth)

Braising Sauce
  • 1 Tbsp minced garlic
  • 5 Tbsp soy sauce
  • 2 Tbsp sugar (adjust to taste)
  • 1 Tbsp sesame oil
  • Pinch of toasted sesame seeds (for garnish)

Cooking Instructions

Step 1

First, prepare 10 eggs. Place the eggs in a pot with enough water to cover them (about 400ml), close the lid, and boil over medium-high heat for 10 minutes to achieve hard-boiled eggs. Gently rolling the eggs while they cook can help prevent them from cracking.

Step 2

Next, let’s prepare the shiitake mushroom stems. If using dried shiitake stems, soak them in lukewarm water for about 10 minutes. If using fresh shiitake stems, rinse them thoroughly under cold water to remove any dirt or debris. Once drained, tear the mushroom stems by hand into bite-sized pieces, about 3-4 cm long. Tearing them allows the sauce to penetrate better, resulting in a tastier dish.

Step 3

Now, let’s make a flavorful broth for braising the shiitake stems and eggs. Pour about 3 cups (approx. 600ml) of water into a pot using a standard paper cup as a measure. Add the washed onion peels, close the lid, and simmer for 10 minutes. The subtle sweetness and aroma from the onion peels will add depth and richness to the braised eggs.

Step 4

After 10 minutes, remove the onion peels from the pot. Then, add the prepared torn shiitake mushroom stems, the boiled eggs, finely chopped Cheongyang peppers (leave the seeds in if you like it spicier), 1 Tbsp minced garlic, 2 Tbsp sugar, and 5 Tbsp soy sauce to the pot. Bring to a boil over medium-high heat, then reduce to medium heat. Uncover and let it simmer for about 15 minutes, allowing the flavors to meld and the sauce to reduce. Stirring the eggs and mushroom stems occasionally will ensure they are evenly coated with the delicious sauce.

Step 5

Once the braised eggs are almost done, turn off the heat. While the pot is still warm, stir in 1 Tbsp of sesame oil. Transfer the braised eggs and shiitake stems to a serving dish. Finally, sprinkle a pinch of toasted sesame seeds over the top for a beautiful garnish and an extra nutty aroma. Your delicious and flavorful braised eggs are now ready! Enjoy them with a warm bowl of rice.
