For the Tart Crust
  • 1 packet cookie mix
  • 1 large egg
  • 60g unsalted butter, softened
  • 15ml milk

For the Walnut Filling
  • 20g unsalted butter, softened
  • 30g brown sugar (or dark brown sugar)
  • 2 large eggs
  • 80ml corn syrup (or light corn syrup)
  • 1 tsp cinnamon powder
  • 80g walnuts, roughly chopped

Cooking Instructions

Step 1

Let’s start with the tart crust. In a mixing bowl, combine 60g of softened butter (ensure it’s at room temperature), 1 large egg, and 15ml of milk. Whisk them together until just combined. Add 1 packet of cookie mix and gently mix until a dough forms. Be careful not to overmix. Gather the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 30 minutes. This chilling step makes the dough easier to handle.

Step 2

Once chilled, take the dough out and place it on a lightly floured surface. Use a rolling pin to roll out the dough to a thickness slightly larger than your tart pan. Carefully transfer the rolled-out dough into the tart pan. Gently press the dough into the bottom and up the sides of the pan, trimming any excess. Place the prepared tart shell back into the refrigerator to chill for at least 1 hour. This helps prevent shrinkage during baking.

Step 3

Remove the chilled tart shell from the refrigerator. Using a fork or a toothpick, prick the bottom of the tart shell all over. This step is crucial to prevent the crust from puffing up while baking, ensuring a crispier texture.

Step 4

Now, let’s prepare the delightful walnut filling. In a separate bowl, combine 20g of softened butter, 30g of brown sugar, 2 large eggs, 80ml of corn syrup, and 1 tsp of cinnamon powder. Whisk everything together until the sugar is dissolved and the mixture is smooth. In a dry pan over medium-low heat, lightly toast the 80g of walnuts until fragrant, then let them cool slightly. Roughly chop the toasted walnuts into bite-sized pieces (about 2-3 pieces each) and stir them into the filling mixture.

Step 5

Preheat your oven to 180°C (350°F). Carefully pour the prepared walnut filling into the chilled tart shell. Place the tart into the preheated oven and bake for approximately 45 minutes, or until the filling is set and the crust is golden brown. If the edges of the crust start to brown too quickly, you can loosely cover them with aluminum foil.

Step 6

Once baked to perfection, remove the walnut tart from the oven and place it on a wire rack to cool completely. For an even more delightful texture and intensified flavor, I personally prefer to chill the tart in the refrigerator once it has cooled slightly.
