  • 3 Eggs
  • 1/4 Pink Sausage (approx. 50g)
  • 1/4 Zucchini (approx. 50g)
  • A little Black Sesame Seeds (for garnish)

Cooking Instructions

Step 1

First, prepare 1/4 of the pink sausage. Cut it into 4 equal pieces, about 1 cm thick each. (You should end up with 4 pieces in total).

Step 2

Cut the prepared pink sausage pieces into your desired size, for example, about 1cm x 1cm. Since these will represent the seeds of the watermelon, it’s best not to cut them too large.

Step 3

Cut the 1/4 zucchini into 4 equal pieces, similar in thickness to the pink sausage (about 1 cm thick). This will create the white rind-like layer of the watermelon when the omelet is rolled.

Step 4

Using a scoop (a small round spoon or a melon baller), carefully hollow out the seeded part of the zucchini pieces to create round indentations. These hollows will be where the watermelon seeds are placed. Scooping neatly will result in a prettier final shape.

Step 5

Crack the 3 eggs into a bowl. Remove the chalazae (the white stringy bits) and whisk them thoroughly with a fork until smooth. It’s best to omit salt or add only a tiny pinch, considering the flavor of any accompanying sauce. (Adjust seasoning based on what you’ll serve it with).

Step 6

Lightly oil a heated pan and pour in a thin layer of the whisked egg mixture. Once the egg starts to set slightly, sprinkle the prepared pink sausage pieces and zucchini pieces over the surface.
