Crunchy and Tangy Carrot Rapé
[Super Easy Recipe] How to Make Magical Carrot Rapé That Even Carrot Haters Will Love | The Perfect Choice for Diet and Health
Carrot rapé is a French-style salad made with shredded carrots. The refreshing tanginess that awakens your appetite and the crisp texture create a fantastic harmony. Many people love this dish for its rich texture and refreshing taste. When refrigerated, it’s great for sandwiches, kimbap, and salads, and also works wonderfully as a pickle alternative. Since it’s much healthier than regular pickles that often contain sugar, you can enjoy it without worry! I’ve heard of many people overcoming their picky eating habits with carrots thanks to this rapé! To balance the distinct carrot flavor, I’ve generously included whole grain mustard. As you become a carrot rapé connoisseur, you can reduce the whole grain mustard and even omit the oligosaccharide or use other sweeteners for a delicious taste. Once you try making it, you’ll realize that precise measurements aren’t that crucial! Let’s give it a go! It tastes even better when aged rather than eaten immediately. As time passes, the carrot flavor mellows, so if you’re not fond of strong carrot flavors, I highly recommend aging it for over 3 days!
Main Ingredients
- 2 Fresh Carrots
- 1/6 Tbsp Salt (fine or coarse)
- 2 Tbsp Whole Grain Mustard
- 2 Tbsp Vinegar (for tanginess)
- 1 Tbsp Oligosaccharide (for sweetness)
- 2 Tbsp Extra Virgin Olive Oil
Cooking Instructions
Step 1
First, thoroughly peel the skin off the fresh carrots. Using a peeler or a knife makes this step easy.
Step 2
Trim off both ends of the carrots (the root and stem ends). This removes any dirt or rough parts.
Step 3
After cleaning the carrots, shred them into thin, long strands. If you have a shredding attachment for your food processor, feel free to use it. Aim for a consistent thickness.
Step 4
Be careful not to cut your fingers when shredding the very end pieces of the carrots. Handle the carrots gently to prevent them from breaking apart while shredding.
Step 5
Now it’s time to mix all the dressing ingredients. In a large bowl, combine 1/6 Tbsp of salt, 2 Tbsp of whole grain mustard, 2 Tbsp of vinegar, 1 Tbsp of oligosaccharide, and 2 Tbsp of extra virgin olive oil.
Step 6
Using your hands or a spatula, gently toss the shredded carrots with the dressing until everything is well combined. The key is to mix lightly so the carrots don’t become mushy.
Step 7
Ta-da! Your delicious carrot rapé is ready. See how simple it is?
Step 8
It’s tasty right away, but letting it chill and mature in the refrigerator allows the flavors to meld, resulting in a much richer and deeper taste.
Step 9
Transfer the finished carrot rapé to a clean airtight container and refrigerate for at least 6 hours before serving for the best flavor. Overnight chilling is even better.
Step 10
Unlike store-bought pickles packed with sugar, this carrot rapé is made with healthy ingredients, so you can enjoy it with peace of mind.
Step 11
As time passes, the crispness of the carrots will soften slightly, developing a more appealing texture. The aging process also naturally mellows any raw carrot undertones.
