- 3-4 Tbsp cooking oil
- 1 Tbsp butter
- Pinch of ground pepper

Finely chop the green onion. While optional, adding green onions greatly enhances the flavor and aroma of the fried rice, making it more delicious. Feel free to adjust the amount to your preference.

In a large bowl, combine the cooked rice, eggs, a pinch of salt, and 1 tablespoon of sesame oil. Mix them well. The key here is to break up any clumps of rice with a fork or spatula so that each grain is separated. Since you’ll be adding oyster sauce later for seasoning, you can use just a tiny bit of salt, or even omit it.

Heat a pan over medium heat. Add the cooking oil and butter. Once the butter is melted, add the chopped green onions and sauté until fragrant, being careful not to burn them. This step infuses the oil with a wonderful aroma.
