- 4 Tbsp cooking oil
- 5 Tbsp honey
- 3 Tbsp sugar
- A pinch of black sesame seeds (for garnish)
Cooking Instructions
Step 1
Hello everyone! Today, we’re making ‘Air Fryer Goguma Mattang,’ which is crispy on the outside and delightfully soft and sweet on the inside. The ingredients are wonderfully simple!
Step 2
First, let’s prepare our star ingredient: 3 sweet potatoes. (Like the ones in the photo!) Choosing larger, plump ones means you’ll get more delicious candied sweet potatoes.
Step 3
Rinse the sweet potatoes under cool running water 2-3 times to remove any dirt. Then, use a peeler or knife to carefully peel off the skin. If there are any small root parts remaining that don’t bother you, it’s okay to leave them on.
Step 4
Once peeled, trim off just a tiny bit from both ends of the sweet potatoes to neaten them up.
Step 5
Now, it’s time to cut the sweet potatoes into bite-sized pieces. Raw sweet potatoes can be quite firm, so be extra careful not to cut your fingers! Place the cut sweet potato pieces on a tray lined with paper towels to absorb any excess moisture. This step helps prevent oil splattering when frying or baking and contributes to a crispier texture.
Step 6
Transfer the patted-dry sweet potato pieces into a mixing bowl. For air frying, add 4 tablespoons of cooking oil.
Step 7
Using a spatula or your hands, toss the sweet potatoes thoroughly to ensure each piece is evenly coated with oil. This pre-treatment helps the sweet potatoes cook up extra delicious and moist in the air fryer.
Step 8
Arrange the oil-coated sweet potatoes in the air fryer basket, filling it without too much overcrowding.
Step 9
Preheat your air fryer to 200°C (392°F) and then cook the sweet potatoes for 10 minutes.
Step 10
After 10 minutes, carefully remove the basket and flip the sweet potato pieces. This ensures even cooking on all sides. Return the basket to the air fryer and cook for another 10 minutes at 200°C (392°F). After a total of 20 minutes, the sweet potatoes should be beautifully golden brown and perfectly cooked. The aroma at this stage is already making my mouth water!
Step 11
Now, let’s make the sweet syrup to coat the potatoes. Place a deep pan on the stovetop over low heat. Add 5 tablespoons of honey.
Step 12
Once the honey starts to melt slightly, add 3 tablespoons of sugar.
Step 13
Stir the honey and sugar together with a spatula until well combined.
Step 14
After about 1-2 minutes over low heat, the sugar will dissolve into the honey, creating a delicious syrup. Be sure to manage the heat carefully to prevent it from boiling over.
Step 15
Add all the air-fried sweet potato pieces into the prepared syrup.
Step 16
Keeping the heat on low, gently stir the sweet potatoes with a spatula, ensuring each piece is evenly coated with the syrup. It’s best to lift the potatoes from the bottom and mix them upwards to coat them thoroughly with the syrup pooled at the bottom. You’ll see them starting to get a beautiful sheen!
Step 17
As the syrup coats the potatoes, they will become more golden and glossy. The syrup will gradually reduce and thicken, coating the sweet potatoes. Once the syrup has mostly thickened and is barely covering the potatoes, turn off the heat and remove the pan. Be careful not to cook for too long, as the syrup can burn.
Step 18
Transfer the glistening, appetizing candied sweet potatoes to a serving dish.
Step 19
To finish and add a lovely touch of flavor and visual appeal, sprinkle a pinch of black sesame seeds over the top. This will enhance the nutty aroma!
Step 20
And there you have it, our finished Air Fryer Goguma Mattang! The exterior, thanks to the air fryer, is slightly crisp, while the inside remains wonderfully soft. The sweetness is perfectly balanced by the pleasant chew of the black sesame seeds, making it incredibly addictive. It tastes even better after all these years!
Step 21
With its shimmering glaze and burst of sweetness, this super simple Air Fryer Goguma Mattang is the perfect way to end a sweet day. Kids will absolutely love it, so I highly recommend giving this recipe a try!
