  • 1/3 package enoki mushrooms

  • 1 Tbsp toasted sesame seeds

Cooking Instructions

Prepare all the vegetable ingredients. Peel the onion and carrot, then slice them into thin strips. For the enoki mushrooms, trim the base and then separate the clump into 3-4 sections lengthwise; this helps the seasoning distribute evenly and cook better. (Optional) If you enjoy a bit of spice, prepare 1 Cheongyang chili pepper, remove the seeds, and slice it diagonally. This will add a pleasant heat.

Heat about 1-2 tablespoons of cooking oil in a pan over medium-high heat. Once the pan is hot, add the sliced onions and carrots. Stir-fry them briskly over high heat. Cooking over high heat helps maintain the vegetables’ crispness and prevents them from becoming watery. Stir-fry for about 1 minute, or until the onions start to turn slightly translucent.

Add the prepared enoki mushrooms and the diagonally sliced Cheongyang chili pepper (if using) to the pan. Next, pour in 1 tablespoon of oyster sauce and 1/2 tablespoon of soy sauce. Stir-fry quickly for about another minute until the ingredients are well combined. Adding the sauces just before finishing and stir-frying over high heat ensures the flavors coat the ingredients without becoming watery. Turn off the heat, then stir in 1 tablespoon of plum extract and 1 tablespoon of toasted sesame seeds until evenly distributed. Your delicious stir-fried onion and carrot is ready!
