Ingredients
  • 3 Nogak cucumbers
  • 3 stalks of green onion

Seasoning
  • 1 Tbsp Gochujang (Korean chili paste)
  • 1/2 Tbsp Doenjang (Korean soybean paste)
  • 2 Tbsp Vinegar
  • 1/2 Tbsp Sesame seeds
  • 1/2 Tbsp Sesame oil
  • 1/2 Tbsp Minced garlic

Cooking Instructions

Step 1

We will use 3 Nogak cucumbers. Notice how they have a slightly different color compared to the regular cucumbers we commonly see.

Step 2

Peel the Nogak cucumbers using a vegetable peeler. Then, cut them in half lengthwise and use a spoon to scoop out the seeds from the center.

Step 3

From this point on, the method differs slightly from traditional Nogak salads. Slice the Nogak into thick, attractive pieces. Then, gently pat them dry with paper towels to remove excess moisture, which will ensure a delightfully crunchy texture.

Step 4

Place the prepared Nogak into a mixing bowl. Finely chop the 3 stalks of green onion and add them. Now, add the seasoning ingredients: 1 Tbsp Gochujang (heaping), 1/2 Tbsp Doenjang, 2 Tbsp Vinegar, 1/2 Tbsp Sesame seeds, 1/2 Tbsp Sesame oil, and 1/2 Tbsp Minced garlic.

Step 5

Gently toss everything together until the seasoning is evenly distributed throughout the Nogak. Your simple and delicious Nogak salad is now complete! Enjoy right away for the best taste.
