[Easy Ebidon Recipe] A Wonderful Meal Made with Leftover Shrimp Tempura, Flavorful Shrimp Tempura Donburi
Do you often have leftover shrimp tempura or other fried items? Frying them again requires a lot of oil, and microwaving makes them soggy and not crispy. In such cases, turning them into a tempura donburi creates a delicious rice bowl, even if the tempura isn’t perfectly crispy. This recipe revives leftovers into a delightful meal.
Shrimp Tempura Donburi Ingredients
- 4 pieces of shrimp tempura (warmed beforehand)
- 1 onion (medium size)
- 2 eggs
Flavorful Sauce
- 1 Tbsp teriyaki sauce
- 1/2 Tbsp oyster sauce
Flavor Enhancing Topping
- A pinch of katsuobushi (bonito flakes)
- 1 Tbsp teriyaki sauce
- 1/2 Tbsp oyster sauce
Flavor Enhancing Topping
- A pinch of katsuobushi (bonito flakes)
Cooking Instructions
Step 1
First, thinly slice the onion into strips. Heat a pan over medium heat and add a little cooking oil. Add the sliced onions and sauté them gently without burning, allowing them to release their natural sweetness and create an ‘onion oil’ base.
Step 2
Once the onions become translucent, add the oyster sauce and stir-fry together. The umami from the oyster sauce will deepen the flavor of the onions.
Step 3
Next, add the teriyaki sauce and sauté until well combined with the onions. If you don’t have teriyaki sauce, a soy sauce-based tsuyu sauce can also be used for a delicious result.
Step 4
Continue to sauté until the onions are tender and the sauce is well blended, releasing a wonderful aroma. This step is crucial for the overall flavor of the donburi.
Step 5
In a clean bowl, whisk the two eggs until the yolks and whites are well combined. Carefully pour the beaten eggs over the sautéed onions in the pan.
Step 6
Cook the eggs just until they are softly set, like a gentle scramble. Avoid overcooking; you want a moist and tender texture.
Step 7
Serve warm rice in a bowl. Gently spoon the cooked onion and egg mixture over the rice, creating an appealing layer.
Step 8
Finally, sprinkle a pinch of katsuobushi (bonito flakes) over the top. This adds a delightful smoky aroma and instantly gives the dish an authentic Japanese flair.
Step 9
Arrange the shrimp tempura pieces, which have been warmed in the microwave, on top of the donburi. Your delicious Shrimp Tempura Donburi, or Ebidon, made from leftovers, is now complete! Enjoy this simple yet incredibly satisfying meal.
