How to Make Radish Salad Featuring Purple Radish – A Recipe for Eye Health

I received some purple radishes, which I’ve never seen before, grown by my in-laws! I was momentarily unsure how to prepare them, but they turned out incredibly delicious when made into a simple radish salad, just like regular radishes. Purple radishes are rich in anthocyanins, beneficial for eye health. This recipe requires minimal ingredients and is quite simple, so be sure to give it a try! ^^

Ingredients for Delicious Radish Salad
  • 1.5 Tbsp minced garlic
  • 1.5 Tbsp salted shrimp (or fish sauce)
  • 1 Tbsp sugar (adjust sweetness to taste)
  • 3 Tbsp plum extract (for a sweet and sour kick!)
  • 1/2 cup gochugaru (Korean chili flakes for color and spice)
  • 1 tsp salt (for seasoning)
  • 800g purple radish or regular daikon radish
  • 1 stalk green onion (thinly sliced)

Cooking Instructions

Step 1

First, prepare 800g of radish. Choose firm, heavy radishes for the best texture. Peel the radish thoroughly and then julienne it into thin strips. About 800g will make a generous portion. In a bowl with the julienned radish, add half a cup of gochugaru (Korean chili flakes) and 1 teaspoon of salt. Gently mix and knead with your hands for about 10 minutes to lightly salt the radish. This process helps to soften the radish slightly while making it even more crisp.

Step 2

While the radish is lightly salting, let’s prepare the other seasonings. At this stage, add 1.5 tablespoons of minced garlic. I initially added only 1 tablespoon and then added another 0.5 tablespoon after tasting, as I felt it needed a bit more. It’s a good idea to taste as you go and adjust the amount of garlic to your preference. Mix this in with the radish.

Step 3

Now it’s time to add the ingredients that will bring depth of flavor. Add 1.5 tablespoons of salted shrimp, 1 tablespoon of sugar for sweetness, and 3 tablespoons of plum extract for a refreshing tang and a glossy finish. If using salted shrimp, including some of the liquid will add a richer umami flavor. Finally, thinly slice 1 green onion and add it to the bowl. Mix everything well to ensure all the seasonings are evenly distributed throughout the radish. The order in which you add the seasonings isn’t critical, so feel free to proceed as you like.

Step 4

Lastly, sprinkle generously with toasted sesame seeds or crushed sesame seeds for a nutty aroma. My cooking method tends to avoid overly salty dishes from the start. For instance, with the salted shrimp, I began with 1 tablespoon but later added another 0.5 tablespoon because I felt the umami wasn’t quite pronounced enough. Taste as you go and adjust the seasoning accordingly. If it’s too bland, you can add a little more salt. Your crispy, sweet, and tangy radish salad is now ready! It’s delicious served immediately, or you can chill it in the refrigerator for a while for an even cooler and more refreshing taste.
