Main Ingredients
- 20 mini frozen pork cutlets
- 2 bowls warm white rice
- 3 fresh eggs (2 for sauce, 1 extra)
- 1/2 onion
- A small amount of green onion, thinly sliced
Cooking Instructions
Step 1
Let’s start making our delicious Donkatsu Donburi by gathering all the necessary ingredients!
Step 2
First, prepare half an onion. Peel off the outer skin and wash it thoroughly under running water.
Step 3
Trim the ends of the onion and then slice it thinly into strips, about 1-2mm thick. Slicing them thinly ensures they become soft and tender when cooked in the sauce.
Step 4
In a bowl, crack 2 fresh eggs. Gently break the shells, pour the eggs into the bowl, and whisk them well with a fork or whisk until the yolks and whites are fully combined. (Tip: It’s convenient to prepare all 3 eggs from the start for the sauce.)
Step 5
If you haven’t prepared 3 eggs yet, now is the time to add the remaining 1 egg and whisk it. You’ll need a total of 3 whisked eggs.
Step 6
Preheat your air fryer. For crispy pork cutlets, line the basket with parchment paper and arrange the 20 mini frozen pork cutlets evenly. Make sure they are not overlapping for even cooking.
Step 7
Place the cutlets in the preheated air fryer set at 180°C (350°F) and cook for the first 10 minutes.
Step 8
After 10 minutes, flip the pork cutlets over. Continue to cook at 180°C (350°F) for another 10 minutes. This will result in beautifully golden brown and crispy cutlets on both sides.
Step 9
Now, let’s make the star of our Donkatsu Donburi: the delicious sauce! Place a wide, shallow frying pan on your stovetop or induction burner. Set the heat to medium. Add 150ml of water to the pan and
Step 10
Add 5 tablespoons of oyster sauce for a rich umami flavor.
Step 11
Also add 3 tablespoons of cooking wine. Cooking wine helps to remove any unwanted odors and enhances the overall flavor profile.
Step 12
Add 1 tablespoon of minced garlic, an essential ingredient in Korean cuisine, to bring in that aromatic touch.
Step 13
Add all the thinly sliced onion you prepared earlier. As the sauce simmers, the onion will release its natural sweetness, making the sauce even more delicious.
Step 14
Finally, add the sliced green onions. They add a lovely aroma and visual appeal. (Tip: Pre-sliced and frozen green onions can be a convenient option.)
Step 15
Add just a pinch of salt to season. Remember that oyster sauce already contains salt, so it’s best to taste and adjust the saltiness as needed.
Step 16
Stir all the ingredients together with a spatula to combine well. Keep the heat at medium throughout this process.
Step 17
Sprinkle in a pinch of black pepper for extra aroma. Be mindful not to add too much, as it can overpower the other flavors. Start with a small amount and add more if you prefer.
Step 18
Once the sauce comes to a gentle simmer, stir it well. Let it bubble slightly, allowing the black pepper’s fragrance to infuse subtly. (Adjust the amount of pepper to your preference.)
Step 19
While the sauce is simmering, slowly drizzle in the 2 whisked eggs. Pour them in a thin stream to create delicate strands.
Step 20
After adding the eggs, do not stir immediately. Let them cook undisturbed for a moment. This will create soft, fluffy egg pieces in the sauce.
Step 21
Check the sauce consistency and, if desired, add the remaining 1 whisked egg for an even creamier and richer sauce. (Use the remaining whisked egg for this step.)
Step 22
Cook until the eggs are softly set and slightly moist – you want them to be fluffy, not firm. Avoid overcooking, as they can turn into poached eggs. Once the sauce is ready, remove it from the heat.
Step 23
Serve a generous portion of warm white rice in a bowl. Ladle a good amount of the freshly made sauce over the rice.
Step 24
Finally, arrange the crispy, golden mini pork cutlets from the air fryer on top, as desired. I used about 10 cutlets for a hearty serving! (Feel free to add as many as you like.)
Step 25
And there you have it – your delicious Donkatsu Donburi is complete! Take a spoonful that includes the rice, sauce, and crispy pork cutlet. The combination of the moist sauce and the crunchy cutlet is truly fantastic. Enjoy it with some kimchi or pickled radish for an even better meal. As they say, ‘Pork cutlet is always right’!
