Main Ingredients
  • 1/2 kohlrabi (Choose one with a few leaves attached and a white exterior for the freshest taste!)

Seasoning
  • 1/2 Tbsp vinegar
  • 1 Tbsp plum extract (maesilcheong)
  • 2 tsp minced garlic (reduce to 1 tsp if serving to children)
  • A pinch of sesame oil
  • 1 Tbsp sesame seeds (ground into powder)

Cooking Instructions

Step 1

First, wash the kohlrabi thoroughly. Select a kohlrabi that has one or two leaves still attached and a bright white exterior, as these tend to be the freshest and most flavorful. (Using 1/2 kohlrabi from your preparation)

Step 2

Carefully peel the kohlrabi with a knife. Then, slice it thinly into bite-sized pieces, similar to julienned vegetables, and place them in a mixing bowl. Add 2 teaspoons of salt and mix well. Let it sit for about 5 minutes to allow the kohlrabi to release some of its moisture.

Step 3

While the kohlrabi is salting, prepare the sesame seeds. Grind 1 tablespoon of whole sesame seeds using a mortar and pestle or a small grinder to create sesame powder (known as ‘kkaesogum’ in Korean). This step adds a wonderful nutty aroma to the salad.

Step 4

After 5 minutes, drain the kohlrabi using a sieve, discarding the liquid that has collected at the bottom. Return the drained kohlrabi to a clean bowl. Add 1 teaspoon of minced garlic. (It’s advisable to use less garlic if you’re serving this to children, as too much can make it too strong for their palates.)

Step 5

Now, add the remaining seasoning ingredients: 1/2 tablespoon of vinegar, 1 tablespoon of plum extract, and a drizzle of sesame oil. Finally, add all the ground sesame seeds you prepared earlier.

Step 6

Gently toss all the ingredients together until the kohlrabi is well coated with the dressing. Your crispy and delicious kohlrabi salad is ready! Enjoy this refreshing and healthy dish.
