Main Ingredients
- 2 cups of small dried anchovies (approx. 100g)
- 2 Tbsp mayonnaise
- 1/2 Tbsp soy sauce
- 1 Tbsp cooking wine (mirin)
- 1 Tbsp plum extract
- 1 Tbsp corn syrup (or rice syrup)
- 1 Tbsp minced garlic
- 2 Korean green chilies
Cooking Instructions
Step 1
First, prepare 2 cups of small dried anchovies. Heat a dry pan over medium-low heat, and without adding any oil, stir-fry the anchovies continuously for about 3-4 minutes until they become crispy. Stirring constantly to prevent burning is key.

Once stir-fried, place the anchovies in a fine-mesh sieve and gently shake to remove any crumbs or small fragments. This step ensures your stir-fry is cleaner and tastier.

To the cleaned anchovies, add 2 tablespoons of mayonnaise and toss well, ensuring each anchovy is evenly coated. Let them sit for a moment to allow the mayonnaise to be absorbed.

In a small saucepan or pot, combine 1/2 tablespoon of soy sauce, 1 tablespoon of cooking wine (mirin), 1 tablespoon of plum extract, 1 tablespoon of corn syrup (or rice syrup), and 1 tablespoon of finely minced garlic. Mix well and bring to a simmer over medium-low heat.
