Last weekend, I took on the challenge of making this popular dumpling Tangsu Pork using a golden recipe that’s incredibly easy to follow. Even on ordinary days, you can create a special meal with this recipe and make delicious memories!

Sweet and Sour Sauce Ingredients
  • 1.5 onions, cut into large pieces
  • 0.5 carrot, cut into large pieces
  • 200g wood ear mushrooms, soaked and cut into bite-sized pieces

Seasoning
  • 3 Tbsp soy sauce
  • 2 Tbsp sugar (or corn syrup)
  • 1 Tbsp ketchup

Dumplings and Starch Slurry
  • 1/2 pack of Bibigo dumplings (or your preferred brand)
  • 2 Tbsp cornstarch
  • 2 cups water (for starch slurry)

Cooking Instructions

Step 1

First, prepare the vegetables for the sweet and sour sauce. Cut the onions into large pieces. (Tip: It’s best to use a non-stick coated pan to prevent sticking. I had a slight mishap when I tried using a clay pot I bought in Japan!)

Step 2

Adding other vegetables from your fridge will make the dish even more flavorful. Feel free to prepare carrots, cucumbers, cabbage, bell peppers, etc., according to your preference. You can make decorative cuts in the carrots for a nicer presentation. (Tip: Use a cookie cutter or slice thinly with a paring knife for beautiful garnishes.)

Step 3

Add the prepared vegetables and wood ear mushrooms to the pan and stir-fry them.

Step 4

In a separate bowl, combine 2 Tbsp cornstarch with 2 cups of water. Whisk thoroughly until smooth to create the starch slurry.

Step 5

To the pan with the sautéed vegetables, add 3 Tbsp soy sauce, 2 Tbsp sugar (or corn syrup), and 1 Tbsp ketchup. Bring to a simmer. Stir constantly with a spatula to prevent the sugar or corn syrup from burning on the pan.

Step 6

Stir everything together to combine the sautéed vegetables and the sauce ingredients well.

Step 7

Reduce the heat to low. Gradually pour in the prepared starch slurry while stirring continuously. Keep stirring to prevent the starch from clumping, and adjust the sauce to your desired thickness. Once thickened, remove from heat.

Step 8

Now it’s time to prepare the delicious dumplings. Use Bibigo dumplings (or your favorite kind).

Step 9

Heat a generous amount of olive oil in a pan over medium-high heat. Fry the dumplings, turning them occasionally, until they are golden brown and crispy on all sides. Ensure the inside is heated through. (Tip: Adding other ingredients like bell peppers, green peppers, cucumbers, or imitation crab sticks can make your dumpling tangsu even more special.)

Step 10

Generously ladle the delicious sweet and sour sauce over the crispy fried dumplings.
