Main Ingredients
  • 1 handful Korean green peppers (approx. 100g)
  • 1 handful dried shrimp (approx. 50g)
  • 1/3 stalk scallion (approx. 30g)

Flavorful Seasoning
  • 1.5 Tbsp soy sauce
  • 1 Tbsp oligodang (corn syrup)
  • 1 Tbsp cooking wine (mirin or similar)
  • 1 Tbsp minced garlic
  • 2 Tbsp cooking oil
  • Pinch of toasted sesame seeds (for garnish)

Cooking Instructions

Step 1

Prepare all your ingredients. Wash the Korean green peppers thoroughly and remove the stems. For the dried shrimp, place them in a sieve and gently shake off any powdery residue. Finely chop the scallion. In a small bowl, mix together the soy sauce, oligodang, and cooking wine to create the seasoning sauce. Having the sauce pre-mixed makes the stir-frying process much smoother.

Step 2

Heat a dry frying pan over medium-low heat. Add the dried shrimp and stir-fry for about 1-2 minutes until they become crispy and fragrant. This step helps to remove any fishy odor and enhances their nutty flavor. Be careful not to burn them. Once crispy, transfer the dried shrimp to a separate plate to cool slightly.

Step 3

In the same pan (no need to wash), add the cooking oil and the chopped scallion. Sauté over low heat, stirring constantly, until the scallion becomes translucent and fragrant, and the minced garlic releases its aroma. This process, called making ‘scallion-garlic oil’, adds a deep layer of flavor to your dish. Avoid burning the garlic.

Step 4

Once the aromatic scallion-garlic oil is ready, add the prepared Korean green peppers to the pan. Stir-fry over medium heat. Cook them just until they slightly soften and their vibrant green color intensifies – about 2-3 minutes. Overcooking will make them mushy, so aim for a tender-crisp texture.

Step 5

When the green peppers are almost done, add the crispy dried shrimp back into the pan. Pour in the pre-mixed seasoning sauce. Stir everything quickly to ensure all ingredients are evenly coated with the sauce. Cook for another minute until the sauce thickens slightly. Turn off the heat, sprinkle with toasted sesame seeds, and give it a final toss. Your delicious and savory Dried Shrimp and Korean Green Pepper Stir-fry is ready to be enjoyed with a hot bowl of rice!
