Crispy Dongchimi Radish Salad Recipe
A Delicious and Crunchy Side Dish Made with Fermented Dongchimi Radishes!

It’s great as a simple side for rice, and versatile enough to be added to bibimbap or used as a substitute for pickled radish in kimbap. Here’s a delicious recipe that your whole family can enjoy.
Main Ingredients
- 3-4 Dongchimi radishes (or store-bought pickled radishes)
Seasoning Ingredients
- 2-3 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Minced garlic
- 1 tsp Allulose (liquid)
- 1 Tbsp Perilla oil
- A pinch of sesame seeds

Cooking Instructions
Step 1
Julienne the Dongchimi radishes or store-bought pickled radishes into bite-sized pieces, about 0.5 cm thick. Cutting them too thin might reduce the crunch, so aim for a moderate thickness.
Step 2
Rinse the julienned radishes in cold water by gently rubbing them with your hands. This helps remove any remaining saltiness and impurities. If you prefer a milder taste, soak them in cold water for about 10-20 minutes to leach out more salt. Adjust the soaking time based on the saltiness of your pickled radishes.
Step 3
Place the drained radishes into a clean cheesecloth or a fine-mesh bag. Squeeze out as much water as possible by hand. This step is crucial for ensuring the seasoning adheres well and prevents the dish from becoming watery. If you have difficulty squeezing, you can use a kitchen tool designed for pressing out moisture.
Step 4
Add all the prepared seasoning ingredients (gochugaru, minced garlic, allulose, and perilla oil) to the well-squeezed radishes. Mix gently. You can adjust the sweetness by adding more or less allulose (or sugar) according to your personal preference.
Step 5
Gently toss and mix the radishes with the seasonings until everything is evenly coated. This ensures the flavors meld beautifully. Finish by sprinkling some sesame seeds on top. Your delicious and crunchy Dongchimi radish salad is now ready!
