Main Ingredients
  • 2 medium sweet potatoes
  • Shredded mozzarella cheese (as much as you like)

Seasoning & Others
  • 3 Tbsp potato starch
  • Pinch of salt

Cooking Instructions

Step 1

First, thoroughly wash the sweet potatoes. Peel them and then slice them into approximately 0.5cm thick rounds. Next, julienne the sweet potato rounds into very thin shreds. Cutting them thinly will ensure they cook evenly and become extra crispy.

Step 2

To prevent browning, soak the julienned sweet potatoes in cold water for about 10 minutes while you continue slicing. This process also helps to remove excess starch, contributing to a crispier texture.

Step 3

Drain the julienned sweet potatoes completely using a sieve. Place the drained sweet potato shreds in a bowl. Add 3 tablespoons of potato starch and a pinch of salt. Toss everything together gently until the sweet potato shreds are evenly coated with the starch mixture. It’s important to create a thin coating of starch on the surface.

Step 4

Heat a non-stick pan over medium heat with a generous amount of cooking oil. Take about half a small handful of the seasoned sweet potato shreds and spread them thinly and in a circular shape in the pan. Generously top this layer with shredded mozzarella cheese. The melting cheese will bind the sweet potato together beautifully.

Step 5

Cover the mozzarella cheese with another layer of the seasoned sweet potato shreds. Ensure the cheese is well-covered to prevent it from oozing out. Try to shape it neatly. Keeping this layer relatively thin will help it cook evenly.

Step 6

Cook over medium-low heat for about 3-4 minutes per side, until both sides are golden brown and crispy. Adjust the heat as needed to prevent burning, ensuring the sweet potato is cooked through and the cheese is fully melted. Once both sides are perfectly crispy, they are ready to serve! Enjoy them hot for the best taste experience.
