A staple side dish! This is a special recipe for my husband who loves stir-fried anchovies. The savory flavor of anchovies, the nuttiness of almonds, and the aroma of garlic combine to make a dish that will have you finishing a bowl of rice in no time! I’ll guide you through it step-by-step so even beginners can easily follow.

Main Ingredients
  • 300g Anchovies (about 4 handfuls)
  • 150g Almonds (about 2 handfuls)
  • 15 cloves Garlic
  • 2 Tbsp Sesame Seeds

Seasoning
  • 2 Tbsp Soy Sauce
  • 2-3 Tbsp Rice Syrup or Corn Syrup

Cooking Instructions

Step 1

First, thinly slice the garlic. Cut the almonds in half if they are too large for easier eating. For the anchovies, using medium-sized or broth-making anchovies will provide a better texture than very small ones.

Step 2

Place the prepared anchovies in a sieve and gently shake to remove any debris or the intestines. (Optional: Lightly toasting the anchovies in a pan beforehand can help remove any fishy smell.)

Step 3

Heat 2-3 tablespoons of cooking oil in a preheated pan. Add the sliced garlic and sauté over low heat, allowing it to slowly cook. This process creates a flavorful garlic-infused oil.

Step 4

Once the garlic is lightly golden, add the anchovies to the pan and stir-fry together for about 5 minutes. Be mindful of the heat to prevent the anchovies from burning, as you want to remove any fishy odor and enhance their savory taste.

Step 5

Now, add the almonds and continue to stir-fry with the anchovies for another 1-2 minutes. Stir them well, making sure to prevent the almonds from burning, so they are evenly coated with the anchovies.

Step 6

Pour the 2 tablespoons of soy sauce along the edge of the pan. Letting the soy sauce hit the hot pan directly enhances its flavor. Next, add 2-3 tablespoons of rice syrup (or corn syrup) and continue to stir-fry until the anchovies and almonds are well coated with the sauce. The rice syrup will give the dish a nice shine and extra crispiness.

Step 7

Stir-fry for about 1 more minute until the sauce has reduced slightly and evenly coats everything. Turn off the heat and sprinkle generously with 2 tablespoons of sesame seeds to finish. The added nutty flavor from the sesame seeds makes this anchovy stir-fry even more delicious. Let it cool slightly before storing in an airtight container to enjoy for a long time.
