  • 1 Tbsp minced garlic
  • 1 Tbsp perilla oil
  • 1/2 stalk green onion
  • A pinch of sesame seeds

Step 1

The key is to maintain a crisp texture! Try making this delicious sautéed radish dish infused with the nutty aroma of perilla oil. Winter radishes, in particular, are sweeter and taste even better.

Prepare fresh radish and fragrant green onions. Wash the radish thoroughly and lightly peel off the outer skin.

We’re going to julienne the radish thinly. While you can slice it with a knife, using a mandoline slicer is much faster and ensures uniform cuts, making it convenient. Thin slices absorb seasoning well and retain a pleasant texture.

Step 4

Julienne all the radish thinly using the mandoline slicer. Sprinkle a pinch of salt (about 1/2 tsp) over the julienned radish and let it sit for about 10 minutes to lightly salt. This process draws out moisture, making the radish crispier, and removes any bitterness.

Gently squeeze out the excess moisture from the salted radish with your hands. Be careful not to squeeze too hard, as this can make the radish mushy. Place the squeezed radish into a pan with 1 Tbsp of perilla oil and begin sautéing over medium-low heat.

Sauté the radish over medium heat until it becomes translucent. It’s best to use medium heat rather than high heat to prevent the radish from burning and ensure it cooks tenderly. Once the radish is partially cooked, add 1 Tbsp of minced garlic and continue to sauté, infusing it with the garlic aroma.

Continue to stir-fry until the perilla oil and minced garlic are well combined with the radish. It’s good to sauté until the radish becomes slightly translucent and tender. It’s perfectly sautéed when it has a glossy sheen and a savory aroma.
