Homemade, Nutritious, and Deliciously Crispy Potato Croquettes Recipe
Today, we’re making delicious, crispy, and savory potato croquettes, packed with benefits for boosting immunity, preventing hypertension, aiding anemia, and improving skin health. 🙂 These are perfect as a snack for kids or an appetizer for adults!
Croquette Ingredients
- 400g Potatoes (approx. 2-3 medium)
- 70g Carrots (approx. 1/4 medium)
- 1/2 Onion (small size)
- 50g Chives (about one handful)
- 2 cups Breadcrumbs
- 1/2 cup All-purpose Flour
- 2 Eggs
- 1 tsp Black Pepper
- 100g Sweet Corn (canned)
- Cooking Oil (for frying)
- 1 tsp Salt
Cooking Instructions
Step 1
First, wash the potatoes thoroughly and peel them completely. Place the peeled potatoes in a steamer and cook for about 30 minutes until very soft. It’s crucial that the potatoes are tender enough to be easily pierced with a fork.
Step 2
While the potatoes are steaming, prepare the other vegetables. Peel the carrots and trim the root end of the onion. Finely dice both carrots and onions. Dicing them small will help them integrate well with the potatoes and improve the texture.
Step 3
Once the potatoes are steamed, mash them thoroughly while they are still hot, using a sieve or a fork. Mashing them when hot makes the process much easier and results in a smoother consistency. Transfer the mashed potatoes to a bowl.
Step 4
Add the finely diced carrots and onions, the washed and chopped chives, and the drained sweet corn to the mashed potatoes. Mix everything together thoroughly. It’s best to use a spatula or your hands to combine the ingredients firmly so they are well incorporated.
Step 5
Now, it’s time to season. Add 1 teaspoon of black pepper and 1 teaspoon of salt to the potato mixture. Gently mix everything together again with your hands, seasoning to taste. Feel free to adjust the amount of salt or pepper according to your preference.
Step 6
Shape the potato filling into bite-sized portions or your desired size. Coat each shaped croquette by first dusting it with all-purpose flour, then dipping it into the beaten eggs, and finally rolling it in breadcrumbs. Ensure a good coating by pressing the breadcrumbs firmly. This prevents the filling from leaking out during frying and ensures a crispy crust.
Step 7
In a deep pan, heat enough cooking oil to cover about half of the croquettes, to around 170°C (340°F). Carefully place the coated croquettes into the hot oil. Fry them for about 3-5 minutes, turning occasionally, until they are a beautiful golden brown on all sides. Once fried, place the croquettes on a paper towel-lined plate to drain excess oil.
