  • Fragrant Chopped Green Onion 2 Tbsp
  • Rich Flavored Plum Extract 2 Tbsp
  • Umami-rich Anchovy Sauce 1 Tbsp
  • Tangy Vinegar 1 Tbsp

  • Spicy Gochugaru (Red Pepper Flakes) 1 tsp
  • Pinch of Black Pepper (to taste)
  • Fine Salt 2-3 pinches (adjust seasoning)
  • Savory Sesame Oil 1 Tbsp
  • Fragrant Sesame Seeds 1 tsp (for garnish)

Cooking Instructions

Step 1

First, prepare the fresh sea grapes. Remove any tough or dirty base parts from the stems with a knife. This makes them easier to eat and improves the texture.

Step 2

Place the cleaned sea grapes in a bowl and pour in warm water. Gently rub and rinse them 3-4 times with your hands, then let them soak in the water for about 5 to 10 minutes until softened. This process removes the characteristic saltiness of sea grapes while retaining their fresh texture.

Step 3

Peel the radish and cut it into thin julienne strips. Slicing them as thinly and evenly as possible will ensure the seasoning is distributed uniformly and maintains a crispy texture. Aim for a thickness of about 1-2 mm.

Step 4

Now, let’s mix the seasonings with the julienned radish. First, add 1 tsp minced garlic, 1 tsp gochugaru, 2 Tbsp fragrant chopped green onion, 2 Tbsp plum extract for depth of flavor, 1 Tbsp tangy vinegar, 1 Tbsp umami-rich anchovy sauce, and a pinch of black pepper. Mix well. Finally, add 2 Tbsp sweet and refreshing lemon syrup and mix everything together again to ensure the seasoning is evenly coated. Marinating the radish in the seasoning beforehand helps it release moisture, making it crispier and allowing the flavors to penetrate better.

Step 5

Drain the sea grapes that were soaking in water and rinse them once more under cold water. Squeeze out any excess moisture thoroughly. This is crucial to prevent the salad dressing from becoming watery and to preserve the natural flavors of the ingredients. Once drained, cut the sea grapes into bite-sized pieces.

Step 6

Now, add the drained sea grapes to the seasoned radish mixture and gently combine them. Taste and adjust the seasoning if needed by adding 2-3 pinches of fine salt to your preference. Lastly, drizzle in 1 Tbsp of savory sesame oil and sprinkle with 1 tsp of sesame seeds, then toss lightly. This completes your delicious sea grapes salad. Adding sesame oil and seeds at the end helps preserve their aroma and savory flavor.

Step 7

Transfer the beautifully mixed sea grapes salad to a nice serving bowl. This vibrant and nutritious side dish is perfect for a light meal or when you need something refreshing. Enjoy the crispy texture and the natural flavors of the fresh ingredients in this healthy sea grapes salad!
