Cooking Instructions
Step 1
First, wash the fresh sweet potato stems thoroughly under running water. Carefully peel off any tough outer skin. Blanch them in boiling water with a pinch of salt for about 1-2 minutes, then rinse under cold water and squeeze out any excess moisture. This step ensures they remain wonderfully crisp. Finely mince the red chili pepper, removing the seeds, and finely mince the garlic.
Step 2
Cut the blanched and drained sweet potato stems into bite-sized pieces, about 5-7 cm long. Heat about 1 tablespoon of cooking oil in a medium-sized pan over low heat. Add the minced garlic and stir-fry until fragrant, being careful not to burn it. Once the garlic aroma is released, add the cut sweet potato stems and stir-fry together.
Step 3
As the sweet potato stems begin to soften slightly while stir-frying with the garlic, add 2 tablespoons of seasoned soy sauce and a pinch of seasoned salt to season. Stir well with a spatula for another 1-2 minutes, ensuring the seasonings are evenly distributed. It’s best to maintain a medium-low heat during this stage.
Step 4
Once the sweet potato stems have absorbed the seasonings and are nicely stir-fried, add the minced red chili pepper and toasted sesame seeds.
