Cooking Instructions
Step 1
First, prepare 500g of fresh radish. Peel the radish thoroughly and julienne it into thin strips about 1mm thick. If cut too thick, the seasoning won’t penetrate well, and if too thin, the texture might be compromised, so cutting to an appropriate thickness is important. Place all the julienned radish in a large bowl.
Step 2
Now, let’s make the seasoning for this delicious radish salad. Measure out 3 Tbsp of gochugaru, 2/3 Tbsp of minced garlic, 2/5 Tbsp of ginger powder, 3 Tbsp of sugar, 1 Tbsp of corn syrup, 24cc of vinegar, 2/3 Tbsp of salt, and 16cc of anchovy sauce, and add them all to the bowl. (For reference, using a standard Korean rice spoon, 24cc of vinegar is about 1.5 spoonfuls, and 16cc of anchovy sauce is about 1 spoonful.)
Step 3
Add the prepared seasoning ingredients to the julienned radish. Gently mix it without crushing the radish. If you knead it too vigorously, a lot of water will be released from the radish, which can diminish its crispness. The key is to mix it gently so that the seasoning is evenly distributed throughout the radish.
Step 4
Transfer the well-mixed radish salad to a prepared container. Finally, sprinkle some toasted sesame seeds on top to complete the appetizing radish salad. While it’s delicious right away, it becomes even tastier when refrigerated for at least 3 hours to allow the flavors to meld deeply. For an even richer flavor, let it mature in the refrigerator for over a day! (Watching the recipe video provides great support for recipe creation.)
