Ingredients
  • 3 stalks of green onions (use mainly the white parts)

Seasoning
  • 1 Tbsp soy sauce
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp plum extract (adds sweetness and shine)
  • 1/3 Tbsp ginger paste (or a little minced ginger)
  • 1/3 Tbsp minced garlic
  • 1/3 Tbsp sesame seeds (toasted)
  • 1/3 Tbsp sesame oil
  • 1.5 Tbsp vinegar (enhances the sour flavor)

Cooking Instructions

Step 1

First, prepare the white parts of the green onions. Cutting them into about 6-7 cm lengths (three segments) makes them easy to handle and a good size. The green parts can have a strong flavor, so focus on using the white parts.

Step 2

Now it’s time to slice the green onions lengthwise. Lay the green onions flat on a cutting board and carefully make slits with your knife, being careful not to cut all the way through. The thick core of the green onion can be tough, so only cut partway through and remove the core part.

Step 3

Once slit, roll the green onion and slice it thinly into fine threads, like julienne. Slicing them thinly like hair will result in a better texture. Even without a mandoline, you can achieve thin slices with a knife.

Step 4

Place the sliced scallion threads in cold water and gently rinse by rubbing them together. This process removes the pungent and bitter flavors of the green onions, making them much softer. After rinsing, use a colander or a salad spinner to remove as much excess water as possible. Too much water will dilute the seasoning.

Step 5

In a large bowl, combine the drained scallion threads with all the prepared seasoning ingredients (soy sauce, gochugaru, plum extract, ginger paste, minced garlic, sesame seeds, sesame oil, and vinegar). Gently mix with your hands, ensuring the seasoning coats the scallion threads evenly. Avoid mixing too vigorously, as this can make the scallions mushy.

Step 6

Your crispy and delicious scallion salad is ready! The spicy, sour, and sweet flavor is exceptional and pairs perfectly with any meat dish. You can enjoy it immediately, or chill it in the refrigerator for a while for an even more refreshing taste.
