  • Burdock root 300g
  • Perilla leaves 30g

Seasoning Ingredients
  • 3 Tbsp Gochugaru (Korean chili flakes)
  • 3 Tbsp Fish sauce
  • 2 Tbsp Maesilcheong (plum syrup)
  • 2 Tbsp Sugar
  • 1 Tbsp Minced garlic
  • 1 Tbsp Sesame oil
  • 1 Tbsp Toasted sesame seeds

Cooking Instructions

Step 1

Peel and thoroughly wash the burdock root under running water. To prevent browning and reduce bitterness, soak the prepared burdock root in water with a splash of vinegar for about 10 minutes. This helps maintain its crispiness and softens the taste. (Note: If the burdock root turns blue when boiling, it’s a natural reaction between anthocyanin and minerals and is completely harmless.)

Step 2

Wash the fragrant perilla leaves clean and thinly slice them into bite-sized pieces.

Step 3

Drain the burdock root from the vinegar water. Add 1 tablespoon of vinegar to boiling water and blanch the burdock root for about 4 minutes. Be careful not to overcook, or it will become mushy. Immediately rinse the blanched burdock root under cold water to cool it down, then drain thoroughly in a sieve to remove all excess moisture.

Step 4
