Crispy Outside, Chewy Inside Coconut Roches
If you’re a coconut lover, we highly recommend these super easy-to-bake Coconut Roches. They have a delightful texture that’s crispy on the outside and wonderfully chewy on the inside.
Ingredients
- 35g egg whites (room temperature)
- 25g granulated sugar
- 50g shredded coconut (long strands)
Cooking Instructions
Step 1
Start by preparing your ingredients at room temperature. In a bowl, gently whisk the egg whites until they are fluid and slightly foamy. You don’t need to whip them into stiff peaks; just break them down so they are easy to mix.
Step 2
Add the granulated sugar to the whisked egg whites. Mix until the sugar is dissolved. You can test this by rubbing a little mixture between your fingers; if you don’t feel any sugar granules, it’s ready. If the sugar is difficult to dissolve, add it in two or three increments while mixing continuously.
Step 3
Once the sugar has fully dissolved and is well combined with the egg whites, it’s time to add the shredded coconut. Gently fold in the shredded coconut using a spatula or spoon until it’s evenly distributed throughout the mixture. Ensure all the coconut strands are coated.
Step 4
Next, portion the mixture. Using a spoon or an ice cream scoop, drop rounded portions of the mixture onto a baking sheet lined with parchment paper. You can gently shape them into slightly flattened rounds with your hands or the back of a spoon. Make sure to leave some space between each roche as they might spread slightly during baking.
Step 5
Now, it’s time to bake! Preheat your oven to 180°C (350°F). Bake for approximately 15 minutes, or until the roches are golden brown on the edges and lightly golden on top. Keep an eye on them, as baking times can vary depending on your oven’s performance. Adjust the time as needed to achieve your desired level of crispiness.
Step 6
