Crisp Cabbage Salad (Yangbaechu Geotjeori)
Easy Cabbage Salad Recipe: Quick 20-Minute Side Dish
Today, I’m sharing a recipe for a delightfully crisp and refreshing cabbage salad, known as ‘Yangbaechu Geotjeori’ in Korean! The savory dressing perfectly complements the refreshing crunch of fresh cabbage, making it an excellent staple side dish for any Korean meal. It’s incredibly simple to make and tastes fantastic. Shall we get started?
Main Ingredients
- 300g fresh cabbage
- 10 stalks green onions
Savory Dressing
- 2 Tbsp Gochugaru (Korean red pepper flakes)
- 1 Tbsp Kkanari fish sauce (or other fish sauce)
- 1 Tbsp Allulose (or sugar/corn syrup)
- 1/2 Tbsp Yeondu (vegetable broth seasoning) (or soy sauce)
- 3 cloves garlic, minced
- 1/4 Tbsp toasted sesame seeds
- 2 Tbsp Gochugaru (Korean red pepper flakes)
- 1 Tbsp Kkanari fish sauce (or other fish sauce)
- 1 Tbsp Allulose (or sugar/corn syrup)
- 1/2 Tbsp Yeondu (vegetable broth seasoning) (or soy sauce)
- 3 cloves garlic, minced
- 1/4 Tbsp toasted sesame seeds
Cooking Instructions
Step 1
Prepare the ingredients. Wash all vegetables thoroughly under running water and pat them dry to ensure the best texture and flavor.
Step 2
Wash the cabbage, then slice it into bite-sized pieces, about 2-3 cm thick. Aim for a slightly thicker cut to maintain its delightful crunch.
Step 3
Trim the root ends of the green onions and cut them into 5cm lengths. This ensures even coating with the dressing and makes the salad easy to eat.
Step 4
Finely mince the garlic. You can press the garlic cloves with the side of your knife before mincing for easier preparation and a more potent flavor.
Step 5
In a mixing bowl, combine the minced garlic, gochugaru, fish sauce, allulose, and Yeondu. Whisk everything together until the dressing is well combined and smooth. Ensuring the dressing is properly mixed will distribute the flavors evenly.
Step 6
Add the sliced cabbage to the prepared dressing. Gently toss and massage the cabbage with your hands, coating each piece evenly. Be careful not to overmix, as this can make the cabbage mushy. The key is a gentle ‘joom-joom’ motion.
Step 7
Once the cabbage is well coated, add the chopped green onions and gently toss again to incorporate them. The fresh onion flavor adds another layer of deliciousness. Finish by sprinkling toasted sesame seeds over the salad.
Step 8
This Yangbaechu Geotjeori features a perfect harmony of spicy, slightly sweet dressing and the wonderfully crisp texture of fresh cabbage. From preparation to the final toss, it takes less than 20 minutes, making it an ideal, fuss-free side dish for any meal. Enjoy this refreshing and flavorful cabbage salad!
