Mu Saengchae is renowned for its crisp texture and unique tangy flavor, making it an indispensable ingredient for bibimbap. It’s also a beloved side dish enjoyed on Korean tables. Enjoy making this refreshing salad!
Main Ingredients- 1 small Korean radish (or ½ large radish)
- ½ stalk of green onion
Seasoning- ½ Tbsp minced garlic
- 2 Tbsp vinegar
- ½ Tbsp sesame oil
- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp sugar (can be reduced to 1 Tbsp based on preference)
- ½ Tbsp salt
- A pinch of sesame seeds
- ½ Tbsp minced garlic
- 2 Tbsp vinegar
- ½ Tbsp sesame oil
- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp sugar (can be reduced to 1 Tbsp based on preference)
- ½ Tbsp salt
- A pinch of sesame seeds
Cooking Instructions
Step 1
First, wash the small radish (or half of a large one), peel it, and then julienne it thinly. Using a mandoline slicer will make this process much faster and more consistent.
Step 2
Place the julienned radish into a large bowl. Now, we’ll add the seasoning ingredients one by one. Start by adding the chopped green onion (½ stalk) and minced garlic (½ Tbsp).
Step 3
Next, add 2 Tbsp of gochugaru (Korean chili flakes) to give the radish a vibrant color.

Add 2 Tbsp of sugar for sweetness. If you prefer it less sweet, feel free to use just 1 Tbsp. Adjust to your taste!

Pour in 2 Tbsp of vinegar to provide that characteristic tangy flavor. Vinegar is crucial for the refreshing taste of Mu Saengchae.
Step 6
Add ½ Tbsp of salt to season. It’s a good idea to adjust the amount of salt slightly based on the radish size and your personal preference.

Finally, sprinkle a pinch of sesame seeds for added nutty flavor and aroma.

Now, gently mix all the ingredients with your hands until the radish is evenly coated with the seasonings. After mixing well, drizzle in ½ Tbsp of sesame oil and give it one more light toss. Sesame oil adds great flavor, but too much can make it greasy, so use it moderately.
Step 9
The radish might seem stiff at first, but don’t worry! Let it sit for a bit. The radish will release its moisture, becoming tender, and the flavors will meld beautifully. You can enjoy it immediately, or chill it in the refrigerator for a while for an even cooler and more delicious experience.
