Crisp and Delicious Bok Choy Kimchi (Geotjeori) Recipe

Crisp and Delicious Bok Choy Kimchi (Geotjeori) Recipe

Easy Bok Choy Kimchi that Pairs Wonderfully with Beef!

One day, when I decided to grill beef at home, I was planning to make a side dish. I assumed I’d have ingredients like green onions, onions, or chives, so I didn’t buy anything for a salad. To my surprise, I had absolutely nothing except some leftover bok choy from making Millefeuille Nabe! I’d only ever had bok choy in hot pot, so I wondered if it would work as a ‘geotjeori’ (fresh kimchi salad). I decided to try it, and the result was a dish that paired incredibly well with beef! The refreshing crunch of the bok choy and the tangy, sweet, and spicy seasoning were a revelation. This is a super simple recipe perfect for when you don’t have many other vegetables available, or when you need a special side dish. The delicious seasoning is also amazing mixed with rice, so definitely give this a try!

Ingredients
  • 5 bundles Bok Choy
  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 2 Tbsp Sugar
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Minced Garlic
  • 1 Tbsp Vinegar
  • 1 Tbsp Fish Sauce (Anchovy)
  • 1 Tbsp Sesame Seeds

Cooking Instructions

Step 1

Making bok choy geotjeori is incredibly simple! First, rinse the bok choy thoroughly under running water. It’s important to wash it carefully, as there might be soil on the outer leaves.

Step 2

After washing, trim the ends of the bok choy or separate the leaves. Letting the water drain well will help the seasoning adhere better. Place the bok choy in a colander and let it drain for a while.

Step 3

Now, let’s make the delicious dressing! In a bowl, combine all the seasoning ingredients except for the sesame seeds. Add 2 Tbsp gochugaru, 2 Tbsp sugar, 2 Tbsp soy sauce, 1 Tbsp minced garlic, 1 Tbsp vinegar, and 1 Tbsp fish sauce. (You can also add 0.5 Tbsp sesame oil if you like.)

Step 4

Mix the seasoning ingredients thoroughly with a spatula or spoon until well combined. Letting the dressing sit for a moment will allow the flavors to meld beautifully.

Step 5

Add the prepared dressing to the drained bok choy and gently toss using your hands. Be careful not to mix too vigorously, as this can mush the bok choy. The key is to coat everything gently.

Step 6

Finally, sprinkle the sesame seeds generously over the top. They add a lovely visual appeal and a nutty flavor. Transfer the finished bok choy geotjeori to a serving dish. It’s delicious to eat immediately!

Step 7

Try serving this alongside freshly grilled beef. The tangy, sweet, and spicy notes of the bok choy geotjeori will cut through the richness of the beef, enhancing its flavor. The crisp texture of the fresh bok choy is also incredibly delightful.

Step 8

Honestly, this delicious seasoning is not only great with bok choy but also makes a fantastic topping for a bowl of steamed rice! If you’re looking for a simple yet special side dish, or when you don’t have much appetite, I highly recommend giving this bok choy geotjeori recipe a try!
