I admit, I wasn’t always a fan of potatoes and didn’t cook with them often. However, after an accidental surplus of potatoes, I began experimenting and discovered a newfound appreciation for them! This led me to create this creamy potato soup, which has become a personal favorite. I used to only enjoy store-bought beef consommé, so I never considered making my own soup from scratch. But then, I had a sudden craving for a potato-based soup, and the idea of adding crispy homemade croutons elevated my desire even further! I found this recipe to be surprisingly simple and not at all cumbersome to make. To my delight, the flavor was far more delicious than I expected, leaving me feeling wonderfully satisfied. Soup Ingredients
- 8 boiled potatoes (medium-sized)
- 1 carton (500ml) milk
- 1/2 onion (medium-sized)
- 1 slice bread
- 500ml water
Seasoning & Garnish
- 1-2 Tbsp butter
- Salt to taste (seasoned salt recommended)
- Pinch of dried parsley (for garnish)

Cooking Instructions
Step 1
Finely dice half an onion. Melt 1-2 tablespoons of butter in a pot over medium heat. Add the diced onion and sauté gently for about 3-5 minutes until it becomes translucent. Sautéing slowly allows the natural sweetness of the onion to develop.
Step 2
Peel and roughly chop the 8 boiled potatoes. Add them to the pot with the sautéed onions. Use a spoon or a potato masher to mash the potatoes until they are smooth and lump-free. Mashing while the potatoes are still warm will make the process easier.
Step 3
Pour in 1 carton (500ml) of milk and 500ml of water. Stir well to combine. Bring the mixture to a simmer over medium-low heat, stirring occasionally. Let it gently simmer for about 5-10 minutes until it reaches your desired soup consistency. Be careful not to let it boil too vigorously, as the milk might spill over. Adjust the simmering time to achieve your preferred thickness.
Step 4
Now, let’s make some crispy croutons! Cut 1 slice of bread into bite-sized cubes, about 1-2 cm square. Lightly butter a frying pan and toast the bread cubes until golden brown, or spread them on a baking sheet and bake in a preheated oven at 180°C (350°F) for 5-8 minutes. An air fryer can also be used for this step.
Step 5
It’s time to season the soup! Add salt to taste, preferably seasoned salt for a fuller flavor. You can also add a pinch of black pepper if desired. This step is crucial for enhancing the rich and creamy potato flavor.
Step 6
Ladle the warm soup into serving bowls. Generously top with the freshly made crispy croutons. Sprinkle a pinch of dried parsley over the top for a beautiful garnish. Serve immediately while hot and enjoy your delicious homemade potato soup!
