It’s even easier to make using leftover boiled or steamed potatoes, especially when fresh potatoes are in season! By using the microwave trick to cook the potatoes, you can significantly cut down on cooking time. You can create a delightful potato soup with just milk and a few simple ingredients from your pantry. Adding homemade crispy croutons will double the chewy texture and flavor. Potato Soup Main Ingredients

Cooking Instructions
Step 1
The basic Baek Jong-won recipe uses salt and sugar, but I opted for chicken stock to add a deeper flavor and umami. If you don’t have chicken stock, you can use the salt and sugar as specified in the recipe.

To help the potatoes cook faster, peel them and slice them thinly. Place the sliced potatoes in a zip-top bag or a microwave-safe container and microwave for 2 minutes and 30 seconds. Flip them over and microwave for another minute. They should be tender enough to mash easily with a spoon. This method allows you to cook potatoes quickly and conveniently.
Step 3
Thinly slice the onion. Prepare 2.5 cups (500ml) of milk. For an even richer and creamier taste, you can use a 50/50 mix of milk and heavy cream, or substitute entirely with heavy cream.
Step 4
Melt 20g of butter in a pot over medium-low heat. Once the butter is melted, add the sliced onions and sauté until translucent. As the onions soften and their sweetness is released, add the pre-cooked potatoes and sauté for 1-2 minutes to coat them with the buttery flavor. Since the potatoes are already cooked, they don’t need to be sautéed for long.
Step 5
Pour the 2.5 cups of prepared milk into the pot with the sautéed onions and potatoes. Add 1 chicken stock cube. (Alternatively, you can use 0.5 Tbsp salt and 0.5 Tbsp sugar instead of chicken stock.)
Step 6
Using an immersion blender, blend the contents of the pot until perfectly smooth and lump-free. Once all ingredients are blended into a creamy consistency, your delicious potato soup is ready. A sprinkle of black pepper or parsley flakes adds a nice touch, but I forgot this time!
