  • 200g King Oyster Mushrooms (or other mushrooms of choice)
  • 1.5 Tbsp Perilla Seed Powder
  • 0.5 Tbsp Rice Flour (for thickening the broth)
  • 1/3 Tbsp Minced Garlic
  • A small amount of Scallion, finely chopped
  • Salt to taste

  • 10g Dried Anchovies
  • 10g Dried Shrimp

Cooking Instructions

Step 1

First, trim the tough bottom ends off the 200g of King Oyster mushrooms. Then, gently tear the mushrooms into bite-sized pieces. Tearing them helps to release more of their flavor into the broth.

Step 2

To make a flavorful broth, bring water to a boil in a pot with 10g of dried anchovies and 10g of dried shrimp. Simmer for about 5 minutes until the flavors have infused into the water. Strain the broth, discarding the anchovies and shrimp, to get a clear liquid. Stir in 1.5 tablespoons of perilla seed powder, whisking well to prevent clumps. Let it simmer for 1-2 minutes.

Step 3

Once the broth with perilla powder comes to a boil again, add the prepared torn mushrooms and 1/3 tablespoon of minced garlic. The mushrooms will enrich the broth as they cook. Continue to simmer over medium-low heat until the mushrooms are tender.

Step 4

After the mushrooms have cooked and the soup has slightly boiled, mix 0.5 tablespoon of rice flour with a little water to form a slurry, then add it to the pot. This will thicken the soup, making it smoother and creamier. Stir well to prevent lumps and bring it back to a gentle boil. Cook for another 1-2 minutes to achieve the desired consistency.

Step 5

Finally, season the soup with salt to your liking, adding it gradually. Mushroom perilla soup is best enjoyed with a mild, savory flavor. Once seasoned, garnish with the finely chopped scallions for added freshness and aroma. Serve hot for the best taste.
