First, let’s prepare the vegetables. Cut the zucchini in half, remove the seeds, and dice it into about 0.5cm pieces. Then, finely mince it using the back of a knife or a vegetable chopper. Finely chopping the vegetables ensures they mix well into the batter and provides a pleasant texture.

Wash the carrot, peel it, and finely mince it to a similar size as the zucchini. The vibrant color of the carrot will make the pancake look even more appetizing.
