Clear and Spicy Potato Soup (Gamjaguk)
A Refreshing and Spicy Clear Potato Soup Recipe
Here’s my favorite potato soup recipe! If you add store-bought sujebi (hand-pulled dough flakes), it truly becomes a sujebi soup. It’s perfect for a hearty meal.
Main Ingredients
- Potatoes (small) 3
- Onion (small) 1
- Zucchini 1/3
- Carrot, as needed
- Green onion 1 stalk
- Cheongyang chili peppers 2 (adjust to spice preference)
- Water for stock 1100ml (or Anchovy-Dashi Pack)
Seasoning
- Fish sauce (like Kkanari aekjeot) 3 Tbsp
- Minced garlic 1/2 Tbsp
- Black pepper 2 pinches

Cooking Instructions
Step 1
First, let’s make the broth for the delicious potato soup. In a pot, combine 1100ml of water with a dashi pack (or anchovies and kelp). Bring to a boil over high heat. Once boiling, reduce heat to medium and simmer for about 10 minutes to create a rich broth. Then, remove and discard the dashi pack.
Step 2
While the broth is simmering, prepare the vegetables for the soup. Peel and wash the potatoes. Also, slice the onion, zucchini, and carrot into manageable pieces. Chop the green onion and thinly slice the Cheongyang chili peppers for a spicy kick.
Step 3
Dice the prepared potatoes, onion, zucchini, and carrot into bite-sized pieces. It’s best to cut them slightly thick so they don’t fall apart while cooking.
Step 4
Lightly rinse the diced potatoes under cold running water to remove excess starch. Add them to the pot with the prepared broth first. They will cook and add flavor to the soup. Simmer over medium heat until the potatoes are partially tender.
Step 5
Once the potatoes are somewhat cooked, add all the remaining prepared vegetables (onion, zucchini, carrot) except for the green onion. Let them cook together until the vegetables are tender and have imparted their sweetness and flavor into the broth.
Step 6
Now it’s time to season the potato soup. Add 3 tablespoons of fish sauce for a savory depth and 1/2 tablespoon of minced garlic for a refreshing taste. Taste the soup and adjust seasoning with soy sauce or salt if needed, according to your preference.
Step 7
Finally, add the chopped green onions and bring the soup to a rolling boil one more time. Your delicious potato soup is ready! Sprinkle 2 pinches of black pepper to taste for extra aroma. It’s wonderful served with rice or enjoyed on its own!
