Chilled Dongchimi Naengmyeon with Savory Pork Bulgogi
A Perfect Lunch at Home: Refreshing Dongchimi Naengmyeon and Spicy-Sweet Pork Bulgogi
Wondering what to have for lunch today, I visited Top Mart. I found naengmyeon on sale and couldn’t resist buying it! As I thought about enjoying naengmyeon, I realized grilled pork would be a perfect pairing. So, I headed to a nearby butcher shop to buy some pork and create a delicious pork bulgogi to go with it. Enjoy a delightful lunch with refreshing naengmyeon and hearty bulgogi!
Naengmyeon Ingredients
- Dongchimi cold noodles (mul naengmyeon) for 4 servings (includes broth and noodles)
Cooking Instructions
Step 1
First, to allow the bulgogi marinade to penetrate well, place all 300g of the pork for bulgogi into a wide wok or pan. We’ll be stir-frying the meat without a separate marinade.
Step 2
Prepare the vegetables to be stir-fried with the pork. Peel the onion and thinly slice it into strips. Remove the base of the king oyster mushroom and shred it into bite-sized pieces by hand. Wash the chives and cut them into appropriate lengths.
Step 3
Add the pork to the prepared wok and stir-fry over medium-high heat until the surface of the meat is nicely browned. The rendered pork fat will add flavor to the bulgogi.
Step 4
Once the pork is partially cooked, add the sliced onion and shredded king oyster mushrooms and continue to stir-fry. Cook until the onions become translucent, mixing the meat and vegetables thoroughly. King oyster mushrooms cook quickly, so avoid overcooking them.
Step 5
When the bulgogi is almost done, add the prepared chives and stir-fry briefly. Stir-fry only until the chives are slightly wilted to maintain their crisp texture. Overcooking will cause the chives to lose their vibrant color and become mushy.
Step 6
Finally, sprinkle some sesame seeds over the finished pork bulgogi for a visually appealing and flavorful dish. Your pork bulgogi is now complete!
Step 7
Now it’s time to prepare the naengmyeon. Drain the 4 servings of dongchimi naengmyeon noodles using a sieve, and gently separate the noodles with your hands. Loosening the noodles prevents them from sticking together and ensures even cooking.
Step 8
Add the loosened noodles to boiling water and cook for 40 to 50 seconds, stirring occasionally with chopsticks to prevent sticking. It’s important to gently stir the noodles so they don’t clump together. Once cooked, quickly drain the noodles and rinse them thoroughly under cold running water, scrubbing gently with your hands. This rinsing process removes excess starch, resulting in chewier and firmer noodles.
Step 9
Finally, pour the refreshing dongchimi broth over the noodles in a bowl and serve the prepared pork bulgogi on the side. Top the naengmyeon generously with crunchy yeolmu kimchi. (My mother-in-law recently made some delicious yeolmu kimchi, but unfortunately, I couldn’t get my hands on it this time, so I used some I had hidden in my fridge! Who made it is a secret!) This way, you can complete a satisfying and delicious lunch at home with homemade pork bulgogi and refreshing dongchimi naengmyeon. Enjoy your meal!
