On a rainy day, when you crave something warm and soupy! Introducing a Tteok Kalguksu recipe that adds the deep flavor of the sea using fresh seaweed. The chewy rice cakes, tender noodles, and refreshing seafood come together to create an unforgettable meal.

Main Ingredients
  • Kalguksu noodles, 1 serving
  • Tteokguk rice cakes, 2 handfuls (approx. 150g)
  • Dried seaweed (Maesengyi), 1 handful (approx. 5g)
  • Anchovy-kelp broth, 600ml
  • Store-bought clam meat, 25g
  • Store-bought mussel meat, 25g
  • Green onion, 1/3 stalk

Seasoning & Others
  • Minced garlic, 1/2 Tbsp
  • Cooking wine (Mirin/Cheongju), 1 Tbsp
  • Ground black pepper, a pinch

Cooking Instructions

Step 1

First, let’s make a delicious anchovy broth. In a pot, combine 650-700ml of water and an anchovy-kelp pack. Simmer over medium heat for about 20 minutes to extract a deep broth. Add the store-bought clam meat and mussel meat, about half a handful each, to the prepared broth to create the basic seafood broth. Lightly rinse the dried seaweed in cold water, drain, and then add it to the broth. Gently stir with chopsticks to loosen and disperse the seaweed. It’s important to ensure the seaweed doesn’t clump together.

Step 2

Once the seafood broth starts to boil, add the tteokguk rice cakes first. After the rice cakes soften and the broth comes to a rolling boil, add 1/2 Tbsp of minced garlic and 1 Tbsp of cooking wine. This will help remove any gamey odors from the seafood and enhance the flavor.

Step 3

Now it’s time to add the kalguksu noodles. Lightly shake the noodles to remove any excess flour that might cause them to stick together, then add them to the boiling broth. Stir gently with chopsticks as they cook to prevent the noodles from clumping. Skim off any foam that rises to the surface during cooking to keep the broth clear. Cook over medium heat for 4-6 minutes, or until the noodles are cooked to your desired tenderness. You can adjust the cooking time based on your preference.

Step 4

Your delicious Seaweed Tteok Kalguksu is now ready! The chewy rice cakes, tender noodles, and the fragrant seaweed, filled with the essence of the sea, combine for a fantastic taste.
