Rice Cake, Cheese & Bacon Roll Ingredients
  • 10 slices bacon
  • Approx. 20 tteokbokki rice cakes (or garaetteok)
  • 4 string cheese sticks (mozzarella or cheddar)
  • 9 Vienna sausages
  • A little sesame oil
  • Skewers (toothpicks or satay skewers) as needed

Cooking Instructions

Step 1

First, bring a pot of water to a boil for blanching the rice cakes and sausages. Cut the ends off the tteokbokki rice cakes so they fit better on the skewers. Cut the string cheese into two pieces. Make 3-4 lengthwise cuts on the Vienna sausages; this will help them open up nicely as they cook.

Step 2

Cut the bacon slices in half. This creates pieces that are a good size for wrapping around the rice cakes or sausages.

Step 3

Once the water is boiling, add the rice cakes and blanch them for about 30 seconds to 1 minute. Be careful not to overcook them until they become too soft. Drain the rice cakes using a sieve and place them in a bowl. Drizzle with a drop of sesame oil and gently toss to prevent sticking and add a touch of nutty flavor.

Step 4

Using the same water used for the rice cakes, blanch the cut Vienna sausages for about 30 seconds to 1 minute. They should become plump and the cuts should slightly open.

Step 5

Now it’s time to assemble! Lay a halved piece of bacon flat. Place a blanched rice cake in the center and roll the bacon around it tightly. Ensure the bacon completely encases the rice cake.

Step 6

After rolling the rice cake, place a piece of string cheese or a blanched sausage on top of the rice cake and wrap it again with another piece of bacon. Since the rice cakes, cheese, and sausages have different thicknesses, it’s best to assemble skewers with one main ingredient type for more even cooking. For example, a skewer might primarily have rice cakes, another just cheese, and another just sausages.

Step 7

Assemble your rolls by wrapping ingredients with bacon or by alternating rice cakes, cheese, and sausages on the skewers. Pierce them firmly onto the skewers to ensure they stay securely in place.

Step 8

Heat a lightly oiled pan over medium-low heat. Place the bacon-wrapped rolls in the pan and cook, flipping occasionally, until golden brown and crispy on all sides. The bacon fat will render and help cook, so you likely won’t need much extra oil.

Step 9

Also, skewer the cut Vienna sausages and cook them in the pan until nicely browned. The juices will seep out from the cuts, making them extra delicious.

Step 10
