Today, I’m excited to share a home-style side dish recipe from the renowned chef Jeong Mi-kyung on ‘The Best Cooking Secrets’ program – a delightful Oyster Mushroom Salad. While I’ve enjoyed stir-fried mushrooms before, a salad with such a vibrant, spicy dressing was a new and intriguing concept for me. The visual appeal was irresistible, so I followed the recipe precisely. This dish offers a wonderful chewy texture from the mushrooms, perfectly balanced with a sweet and spicy sauce, making it an absolute treat!
Main Ingredients
- 150g Oyster Mushrooms
- 30g Green Onions (Scallions)
Spicy & Sweet Dressing
- 1 Tbsp Gochujang (Korean chili paste)
- 1/2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Sugar
- 1 Tbsp Soy Sauce
- 1 Tbsp Sesame Oil
- A pinch of Black Pepper
- 1 Tbsp Gochujang (Korean chili paste)

Cooking Instructions
Step 1
Begin by preparing your fresh oyster mushrooms and green onions. Ensure they are clean and ready for use.

Gently rinse the oyster mushrooms under running water. Then, tear them by hand into bite-sized pieces. This natural tearing process helps the mushrooms absorb the seasoning better, resulting in a richer flavor.

Wash the green onions thoroughly and pat them dry. Cut them into approximately 4cm lengths. Cutting them too finely might diminish the texture, so aim for a manageable size.

In a mixing bowl, combine 1 tablespoon of gochujang, 1/2 tablespoon of gochugaru, 1 tablespoon of sugar, and 1 tablespoon of soy sauce. Add 1 tablespoon of sesame oil for aroma and a pinch of black pepper. Whisk everything together to create a flavorful dressing. For an even deeper flavor, you can let the dressing sit and meld for a short while.

Heat a non-stick pan over medium heat without adding any oil. Add the torn oyster mushrooms and stir-fry them until their moisture evaporates and they turn a light golden brown. This step is crucial for achieving a delightfully chewy texture. Once browned, spread the mushrooms out on a plate to cool.

Now, add 1 tablespoon of olive oil to the same pan. Add the cut green onions and sauté them briefly until they become slightly tender and vibrant in color. Be careful not to overcook them, as they can become tough. Just a quick sauté is perfect.

Combine the cooled, stir-fried oyster mushrooms and the lightly sautéed green onions in the bowl with the prepared dressing. Gently toss everything together, being careful not to mash the ingredients. Ensure the dressing coats everything evenly.
