  • Well-fermented Kimchi (sour kimchi) 1/2 cup (approx. 100g)
  • Dried Shredded Squid (Japchae Threads) 1/3 cup (approx. 30g, cut into bite-sized pieces)

  • Pinch of Black Pepper
  • 1 tsp Oyster Sauce (adjust to taste)
  • 2 Tbsp Cooking Oil (or butter)

Cooking Instructions

Step 1

Take out the pre-seasoned or prepared dried shredded squid. If the squid is too tough, briefly rinse it in cold water, squeeze out excess moisture, or microwave for 10-15 seconds to soften it before use for a better texture.

Step 2

Chop the well-fermented kimchi into small pieces with scissors or a knife so it mixes well with the rice. Cut the dried shredded squid into manageable, bite-sized pieces. Place the chopped kimchi and squid in a pan, sprinkle with black pepper. Drizzle in 2 tablespoons of cooking oil and heat over medium heat.

Step 3

Once the ingredients are in the pan, stir-fry them using a spatula or spoon, ensuring the kimchi and squid are evenly combined. Sauté for about 2-3 minutes until the kimchi becomes slightly translucent and the squid softens. It’s best to cook over medium heat rather than high heat to prevent burning and allow the flavors to meld beautifully.

Step 4

Now, add 1 serving of cooked rice (approx. 200g). Add 1 teaspoon of oyster sauce for an extra layer of umami. The amount of oyster sauce can be adjusted based on the saltiness of your kimchi and your personal preference for a more delicious outcome.

Step 5

Using the spatula, press down on the rice and ingredients while stirring to ensure the rice and seasoning are well mixed. Continue to stir-fry for about 2-3 more minutes, allowing the flavors to infuse into every grain of rice. The fried rice is ready when the rice grains are fluffy and have a nice sheen. Serve hot in a bowl and enjoy!
