With the frequent rain these days, what better way to enjoy it than with a comforting plate of savory Korean pancakes? This recipe for ‘Ggomak Buchu Jeon’ features the delightful chewiness of cockles (ggomak) combined with the fresh aroma of chives. We recently brought home some fresh cockles, enjoyed some seasoned, and saved the rest for this delicious pancake. It’s the perfect dish to savor with the sound of rain.
Ingredients
- 1/3 bunch of chives (washed and trimmed)
- 1 large egg
- 1/3 cup pancake mix (buchim garu)
- 1/3 cup frying mix (twigim garu)
- 1/5 carrot (thinly julienned)
- 1/4 zucchini (thinly julienned)
- 2/3 cup cooked cockles (shelled)
Cooking Instructions
Step 1
In a large bowl, combine the pancake mix and frying mix in equal parts. Crack in the egg, then gradually add a little water while stirring with chopsticks or a whisk until you achieve a smooth batter without lumps. Aim for a consistency that’s not too thin, allowing the ingredients to bind well.
Step 2
Cut the prepared chives into approximately 5cm lengths. Thinly julienne the carrot and zucchini. Add the pre-cooked, shelled cockles to the bowl. Gently mix everything together with a spoon or spatula, ensuring the batter evenly coats the ingredients. Be careful not to mash the cockles.
Step 3
Once all the ingredients are well combined with the batter, your delicious clam and chive pancake mixture is ready. Now, it’s time to get cooking!
Step 4
Heat a generous amount of cooking oil in a non-stick pan over medium-high heat. Using plenty of oil will result in a crispier and more flavorful pancake. Ladle a portion of the batter onto the hot pan and spread it thinly. Pan-fry for a few minutes on each side, until golden brown and crispy. Serve hot and enjoy the delightful contrast of textures and flavors.
