  • 1 package King Oyster Mushrooms (approx. 300g)
  • 10g Scallions or Green Onions
  • 1 Red Chili Pepper
  • 1 Egg
  • Pinch of Salt
  • 1 Tbsp Mirin or Cooking Sake
  • 3 Tbsp Starch or Pancake Mix
  • Generous amount of Cooking Oil
  • 1 pinch Black Pepper

Cooking Instructions

Step 1

Please prepare all the ingredients in advance for making delicious king oyster mushroom pancakes. Washing and trimming them beforehand will make the cooking process much smoother.

Step 2

Wash the king oyster mushrooms thoroughly under running water and trim off the tough bottom part. Then, slice them lengthwise into pieces about 0.5cm thick, preserving their natural shape. This cutting method yields a pleasant texture and an appealing appearance.

Step 3

Lightly season the sliced king oyster mushrooms by sprinkling a pinch of salt and pepper evenly over them. Let them sit for about 5-10 minutes to allow the mushrooms to absorb the seasoning well.

Crack the egg into a bowl, remove the chalaza (the white, stringy part), and add a pinch of salt and mirin (cooking sake). Whisk well with a fork or whisk until smooth. Mirin helps to eliminate any eggy smell and adds a nice flavor.
