Main Ingredients
- 1 block Dried Acorn Jelly
- 1/2 Onion
- A small amount of julienned Carrot
- 1/2 stalk Green Onion
- 1 Red Chili Pepper
- A small amount of soaked Glass Noodles
Seasoning & Others
- 1 Tbsp Minced Garlic
- 1 Tbsp Soy Sauce
- 1 Tbsp Fish Sauce (or Tuna Extract)
- 1 Tbsp Cooking Syrup (or Oligosaccharide)
- 1/2 Tbsp Oyster Sauce
- 1 Tbsp Perilla Oil
- A small amount of Sesame Seeds
- A little Cooking Oil
- 1 Tbsp Minced Garlic
- 1 Tbsp Soy Sauce
- 1 Tbsp Fish Sauce (or Tuna Extract)
- 1 Tbsp Cooking Syrup (or Oligosaccharide)
- 1/2 Tbsp Oyster Sauce
- 1 Tbsp Perilla Oil
- A small amount of Sesame Seeds
- A little Cooking Oil
Cooking Instructions
Step 1
First, place the dried acorn jelly in cold water and soak it for about 2 hours until thoroughly softened. It’s important to allow ample time for the hard acorn jelly to become pliable.
Step 2
After 2 hours, drain the soaked acorn jelly using a colander.
Step 3
Bring a pot of water to a boil and blanch the prepared acorn jelly for 2-3 minutes. This step will make the acorn jelly even more firm and chewy, and also helps remove any impurities.
Step 4
Rinse the blanched acorn jelly under cold water to cool it down, then drain it thoroughly in a colander. Let it cool for a bit. Ensuring good drainage prevents the dish from becoming watery when stir-fried.
Step 5
Heat a little cooking oil in a wide pan or wok over medium heat. Add the minced garlic and stir-fry until fragrant. Then, add the julienned onion, carrot, chopped green onion, and diagonally sliced red chili pepper. Stir-fry together until the vegetables are slightly softened.
Step 6
Once the vegetables are cooked and tender, add the drained acorn jelly to the pan and gently mix it in.
Step 7
Now it’s time to add the seasoning. Combine 1 Tbsp soy sauce, 1 Tbsp fish sauce, 1 Tbsp cooking syrup, and 1/2 Tbsp oyster sauce. Stir-fry well, mixing the acorn jelly and vegetables evenly with the sauce. Feel free to adjust the seasoning to your taste.
Step 8
Since the glass noodles are already soaked (and often pre-cooked), add them to the pan in the final stage and stir-fry briefly with the sauce. Make sure to separate the noodles so they don’t clump together.
Step 9
Just before turning off the heat, add 1 Tbsp of perilla oil for a nutty aroma and mix gently one last time. Adding perilla oil at the end preserves its fragrant flavor.
Step 10
Finally, sprinkle with sesame seeds. Your chewy and delicious stir-fried dried acorn jelly with vegetables is ready! Serve it over warm rice or enjoy it as is.
