- 3-4 plump King Oyster Mushrooms
- 1 Red Chili Pepper
- 1 Green Chili Pepper
- 4 Eggs
- 3 Tbsp Pancake Mix (Buchim Garu)

Cooking Instructions
Step 1
First, select plump and nicely shaped King Oyster Mushrooms. Trim off the tough bottom end, then slice them lengthwise. Aim for a thickness of about 0.5 cm. If they’re too thin, they might lose their chewy texture, and if they’re too thick, they’ll take longer to cook. Getting the thickness right is key for the best texture.
Step 2
Slice the trimmed King Oyster Mushrooms into pieces about 0.5-0.7 cm thick, suitable for eating. This thickness adds a satisfying chewiness and prevents them from falling apart when cooked.
Step 3
In a large bowl, crack in the 4 eggs and add 2 pinches of fine salt. The salt helps to eliminate any eggy smell and seasons the batter. Use a whisk to beat the eggs until they are smooth and well combined, with no streaks.

For the garnish, thinly slice the red and green chili peppers after removing the seeds. Slicing them thinly, either crosswise or lengthwise after halving, will make them look attractive and have a softer texture on top of the pancake.
