  • 1 Tbsp soy sauce
  • 1 Tbsp tuna extract (or fish sauce)
  • 0.5 Tbsp sugar
  • 1 cup water (200ml)
  • 4 Tbsp cooking oil

Cooking Instructions

Step 1

First, prepare the stars of this dish: the onion and eggs! We’re using half a medium onion here, but if you love a sweet onion flavor, feel free to use a whole medium onion. Using more onion will only enhance the deliciousness!

Step 2

Heat 4 tablespoons of cooking oil in a pan over medium-low heat. Add the sliced onions and sauté them until they turn a beautiful golden brown, stirring occasionally to prevent burning. You’ll know they’re ready when they release a sweet, caramelized aroma. This step is key to bringing out the onion’s natural sweetness.

Step 3

Once the onions are nicely browned and fragrant, pour in 1 cup (about 200ml) of water. Stir well, scraping up any delicious bits stuck to the bottom of the pan.

Step 4

Now, let’s add the flavor enhancers! Stir in 1 tablespoon of tuna extract (or fish sauce), 1 tablespoon of soy sauce, and 0.5 tablespoon of sugar. Mix everything thoroughly until well combined.

Step 5

Bring the sauce to a simmer over high heat. Let it bubble away, allowing the liquid to reduce and the sauce to thicken slightly. Cook until the sauce is nicely concentrated and glossy. This will create a rich topping for your rice.

Step 6

When the sauce has reached a slightly syrupy consistency, gently pour in the beaten eggs all over the pan. Cook until the eggs are about 70% set – they should still be a little runny. Immediately turn off the heat. You can cover the pan briefly to let the residual heat finish cooking the eggs, or simply let them cook through with the remaining heat, as I did. The magic of this dish lies in not overcooking the eggs; keeping them slightly soft and creamy creates a wonderfully tender texture that perfectly complements the savory sauce and fluffy rice.
