- 2kg Fresh Giant Scallops
- 1 Onion
- 1/2 Yellow Bell Pepper
- 1/2 Red Bell Pepper
- 1 Korean Green Chili Pepper (optional, adjust quantity to your spice preference)
- 180g Mozzarella Cheese
- 80g Unsalted Butter
Cooking Instructions
Step 1
First, gently rinse the fresh giant scallops under running water 2-3 times. This step helps remove any grit or debris from the shells.

Next, use a soft brush to scrub the surface of the scallop shells thoroughly. Cleaning the inside of the shells as well will ensure a cleaner eating experience.

As you’re washing them, live scallops might suddenly open their shells with a ‘snap!’ This is a sign of their freshness, so don’t worry and proceed to the next step.

If the scallops are difficult to open, carefully insert a thin, sharp knife into the gap between the shells.
Step 5
Now, it’s time to separate the top shell. Insert the knife into the opening, keep the tip steady, and then gently slide it upwards in a counter-clockwise motion. It should detach easily. Avoid using excessive force.

It’s recommended to remove the greenish-black internal organs (where toxins can accumulate) located next to the scallop muscle. Carefully trim these away with a clean knife.

After cleaning, rinse the scallops again briefly under running water, swishing them gently to wash away any remaining impurities. Then, place them upright in a colander to drain thoroughly. Ensuring they are dry will lead to a better baked texture.

While the scallops are draining, prepare your delicious toppings. Finely dice the onion and both yellow and red bell peppers into small, thumbnail-sized pieces.
