  • 20g dried seaweed
  • 1 can saury (including the liquid)

  • 2 Tbsp soy sauce for soup
  • 1 Tbsp minced garlic
  • Pinch of black pepper
  • 1 Tbsp cooking wine (mirin or rice wine are also fine)

Cooking Instructions

Step 1

First, soak 20g of dried seaweed in lukewarm water for about 15-20 minutes until it’s fully rehydrated. Rinse the seaweed thoroughly under cold water, squeeze out excess water, and then chop it into bite-sized pieces. Place the chopped seaweed in a pot and add enough water to cover it completely. Bring it to a rolling boil over high heat.

Step 2

While the seaweed is boiling, open 1 can of saury. Pour the entire contents of the can, including the liquid, into the pot with the boiling seaweed. Use a spoon or fork to gently mash the saury pieces into smaller flakes. This helps to infuse the broth with the rich flavor of the saury.

Step 3

Add the mashed saury and its liquid to the boiling seaweed soup. Now, stir in 2 Tbsp of soy sauce for soup, 1 Tbsp of minced garlic, a pinch of black pepper, and 1 Tbsp of cooking wine (or mirin/rice wine). Reduce the heat to medium-low and let it simmer for another 10 minutes. This allows all the flavors to meld together beautifully.

Step 4

As the soup simmers, skim off any foam or excess oil that rises to the surface. Use a ladle or spoon to remove these impurities. This step ensures a cleaner, more refined taste and a more appealing appearance for your soup.
