Baek Father’s Super Simple Onion Curry Rice
Baek Father Style! An Easy and Delicious Curry Rice Recipe with Lots of Onions

Main Ingredients
- 100g curry powder (store-bought)
- 2 onions (medium size)
- 1 cup pork (ground or finely chopped)
- 3 Tbsp ketchup
- 1 Tbsp chili powder
- Pinch of black pepper
- 4 cups water (800ml)
- Warm rice (for serving)
Cooking Instructions
Step 1
First, wash and peel the 2 onions. Dice them into roughly 1.5cm square pieces. Heat a generous amount of cooking oil in a wide pan or pot over medium-low heat. Add the diced onions and sauté them slowly. It’s crucial to cook the onions until they become translucent and release their sweet aroma, stirring occasionally to prevent burning, for about 10 minutes. The longer you sauté the onions, the deeper their sweetness and flavor will become.
Step 2
Once the onions are nicely browned and softened, add the 1 cup of pork. Break up any clumps and cook until the pork is thoroughly cooked and no longer pink. When the pork is fully cooked, sprinkle in a pinch of black pepper to help reduce any gamey odors.
Step 3
Now it’s time to add the seasonings that will enhance the flavor. Add 3 tablespoons of ketchup and 1 tablespoon of chili powder. Stir well with the onions and pork, and continue to cook for about 1-2 minutes, mixing everything together. The ketchup adds umami and a subtle sweet and tangy flavor to the curry, while the chili powder provides a hint of spice to cut through richness.
Step 4
Finally, pour in the 100g of curry powder and 4 cups (800ml) of water, and stir well to dissolve. Make sure there are no lumps by whisking or stirring with a spatula. Bring the mixture to a simmer over medium-low heat. Continue to cook for about 5-7 minutes, stirring occasionally, until it thickens to your desired consistency.
