- 1 Tbsp plum extract (Maesilcheong)
- 1/2 Tbsp oligosaccharide or corn syrup (for gloss and sweetness)
- 2 Tbsp sesame oil (for nutty aroma)
- 1 Tbsp gochugaru (Korean chili flakes, adjust to taste)
- A pinch of toasted sesame seeds
- 8 Tbsp soy sauce (Guk-ganjang or Jin-ganjang)
- 1/2 Tbsp minced garlic
- 1 Tbsp plum extract (Maesilcheong)
- 1/2 Tbsp oligosaccharide or corn syrup (for gloss and sweetness)
- 2 Tbsp sesame oil (for nutty aroma)
- 1 Tbsp gochugaru (Korean chili flakes, adjust to taste)
- A pinch of toasted sesame seeds
Cooking Instructions
Step 1
First, it’s important to properly prepare the wild chives. Gently remove any dirt from the roots and trim away any wilted or unsightly leaves. Then, rinse them thoroughly under running water by swishing them around. After washing, drain the wild chives well in a sieve. Ensuring they are well-drained will prevent the seasoning from becoming watery and allow it to adhere beautifully.
Step 2
Once the wild chives are drained, finely chop them into bite-sized pieces. If you chop them too finely, their natural fragrance might be diminished. Aim for pieces about 3-4 cm long to best preserve their texture and aroma. Place the chopped wild chives into a mixing bowl.
Step 3
Now, gather all the seasoning ingredients. Measure out the soy sauce, minced garlic, plum extract, oligosaccharide, sesame oil, and gochugaru. Add all these measured ingredients to the bowl containing the chopped wild chives. Have your toasted sesame seeds ready as well.
Step 4
Add all the prepared seasoning ingredients to the bowl with the wild chives. Gently mix everything together, being careful not to mash the chives. Use a spoon or spatula to lightly combine them until the seasoning is evenly distributed. Finally, sprinkle generously with toasted sesame seeds for an extra nutty flavor. Your delicious Wild Chive Jang is now complete!
Step 5
This finished Wild Chive Jang is wonderfully versatile. Mix it into a bowl of freshly cooked rice for a delightful spring meal. It pairs exceptionally well with mild rice dishes like oyster rice or radish rice, as the chive’s fragrance really enhances the overall flavor. Alternatively, enjoy it by spreading it on a piece of warm rice and wrapping it with crispy grilled seaweed for a fantastic snack or light meal. Enjoy experimenting with this versatile sauce!
